Does stainless stick?

A cold pan with wet food will stick. Preheat until a drop of water skitters, add fat, then the food. Eggs and chicken release when the pan is actually hot.

Why not a cheaper nonstick?

Will it fit my stove?

Ten inches is the everyday home-burner size. If you cook for two or more most nights, look at the 12-inch as well.
